Lettie’s Lemon Pound Cake
Now when you are pushed for time, you can still enjoy presenting a luscious pound cake to your own or church family in an easier, quicker way by using a commercial cake mix. If you don’t tell, we won’t either!
This easy, moist lemon cake was a gift from Robert and Lettie Atkins. You will love it as much as we did!
1 package Duncan Hines Yellow Butter Cake mix
1 (3-ounce) lemon gelatin
3/4 cup salad oil
3/4 cup water
1 teaspoon lemon extract
4 whole eggs
Add gelatin to cake mix; mix well.
Add oil, water, lemon extract and blend.
Add eggs, one at a time; mix well after each addition.
Pour batter into greased/floured tube pan.
Bake at 350°F for 45 to 60 minutes.
Let cool for 15 minutes before removing from pan.
Glaze while cake is still warm.
